Poached Chicken Is About Heat Control, Not Guesswork

A whole bird cannot be cooked reliably by one universal number of minutes. Weight, shape, starting temperature, pot size, water volume, burner behavior, and resting all affect the result.

The non-negotiable safety check

Verify 165°F / 73.9°C

USDA guidance sets this safe minimum for all poultry. For a whole bird, check the innermost thigh and wing and the thickest part of the breast, with the probe away from bone.

Color, juice clarity, and elapsed time are not substitutes for a food thermometer. Do not wash raw chicken; splashing water can spread contamination around the kitchen.

What every trial must record

  • Bird Weight, shape, starting temperature
  • Pot Diameter, depth, lid, water volume
  • Heat Heating sequence and burner changes
  • Temperature Breast, inner thigh, inner wing
  • Rest Duration, environment, carryover
  • Result Skin, juiciness, slicing, broth
